strawberry rhubarb crumble

I knew I had to make it when I saw Ash’s rhubarb vanilla crumble. I love rhubarb! Just smelling it reminds me of the many many summers I spent with my sister in our garden eating fresh rhubarb covered in a huge amount of sugar. Running through the sprinkler, have bread with strawberry-rhubarb-jam for breakfast … and crumble … do I have to say more? i ♥ the 80s :-)!

80s crumblerhubarb strawberry crumble

500g fresh rhubarb
200 gr strawberries
some brown sugar
crumble topping
1 cup plain (all-purpose) flour
1/3 cup of sugar
100g butter

Preheat oven to 180 c. Cut and combine rhubarb and strawberries. Place in a oven proof dish (or spli it into little ones). To make the topping, combine flour, sugar and butter. Pile the mixture on top of the fruit. Bake for 50min or until the topping is golden and the rhubarb is soft.

    Gine, I love the simplicity of the recipe with also only few ingredients involve. They look and sound delicious!

    I love the crumble. It is so homebaked, so humble and so delicious. I really want to make a batch myself now. And the strawberry/rhubarb combination sound great. BTW, love the cupcake wrappers! ;)
