I checked the Daring Bakers challenge quite late this month. And I have to admit that opening the forum the first thing that came up in my mind was: It’s French. Again! I checked it in a rush and postponed it to have a look at it later. Because it was French, seriously :-). Oh well, I prefer calling my croissant cornetto and my tarte au citron torta al limone … I guess, my French teacher in school just made me be supersuspicious whenever hearing the word “French”.
But, things turned out far from what I expected them to be :-). All of a sudden I came along French things all the time: I made a ganache and a pâte a choux. And all good things come in threes, isn’t it? So one nice saturday morning I decided to check the Daring Bakers challenge again :-).
This month’s challenge is brought to us by Karen of Bake My Day and Zorra of 1x umruehren bitte aka Kochtopf. They have chosen Tuiles from The Chocolate Book by Angélique Schmeink and Nougatine and Chocolate Tuiles from Michel Roux.
By thé way, tuiles belong to these small fancy cookies, pastries, or confections called “petits fours.” So first thing to get started for me is always writing a shopping-list. Nice surprise: I already had everything at home :-). So that got me very enthousiastic because that meant: more time to think about the nicest part, shaping the tuiles :-). I first thought of making bambies. Seriously :-). I just bought a bambi-stencil so I wanted to use it, bending the legs or something. Luckily another idea came up in my mind just in time: cannoli!

Take the cannoli
Step 1
First step is preparing the dough which is quite easy though. Cream butter, sugar and vanilla in a plastic bowl. Add the egg-whites, one at a time. Add the flour in small batches and mix it just until is smooth. Don’t overmix the batter
as this results in tough cookies, because more beating = more gluten. Once your batter is ready cover the bowl with plastic wrap and chill it in the fridge for at least 30 minutes. It’ll firm up by doing so.
Step 2
So now the more interesting part begins. It took some time to get me organised (but ok, I have to admit that it always takes me some time to get organised as I’m just not an organised person I guess :-)). First thing to do: Line a baking sheet with baking paper and butter it. The recipe asked for a stencil, but as I opted against bambi, I was too lazy to prepare one. So I just spread the batter (very very thinly) on the buttered bakingpaper and shaped it by using a bowl upside down and removing the outer batter around it with a knife. It worked perfectly!
I made one cookie at a time (as they were quite huge and my oven is quite small). So I could prepare my next bakingpaper with batter while the cookie before was baking in the oven, very efficient :-).
To shape my cannoli I simply used the other end of a spoon (this kind of long thin plastic spoons) and it worked perfectly too.

And this is what you need:
Ingredients:
- 65 gram softened butter (not melted but soft)
- 60 grams sifted confectioner’s sugar
- 1 sachet vanilla sugar
- 2 large egg whites (slightly whisked with a fork)
- 65 grams sifted all purpose flour
- Butter to grease baking sheet
Oven: 180° C
Baking time: 5-10 minutes per batch
